Ingredients
Roasted sweet potato
- 1 medium red sweet potato, chopped
- 1 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp chili powder
- ¼ tsp cumin
- 1 tsp salt & pepper, to taste
Salad fixings
- 2 cups baby kale
- 2 cups baby arugula
- 1 apple, thinly sliced
- 1 tbsp toasted pumpkin seeds
- ¼ cup shaved parmesan cheese
- 4 tbsp Toby’s Honey Mustard Dressing & Dip
Instructions
Gather all ingredients. Heat a skillet over medium high heat. In a bowl, combine sweet potato and olive oil. Mix until evenly coated, then add garlic powder, chili powder, cumin, and salt & pepper. Mix again. Cook in skillet, tossing occasionally until tender and lightly charred.
In a large serving bowl, add kale and arugula. Top with apples, roasted sweet potato, pumpkin seeds, parmesan, and drizzle over with Toby’s Honey Mustard Dressing & Dip. Serve and enjoy your Apple Autumn Salad!
