Baked Apple Berry Oatmeal

- 1 3/4 cups milk, can sub oat milk
- 1 1/2 cups mixed berries, fresh
- 2 large eggs
- 1/4 cup Genesis Organic Apple Juice of choice, we used Ginger Apple
- 1/4 cup pure maple syrup
- 1/4 cup butter, melted
- 1/4 cup unsweetened applesauce, or mashed banana
- 3 cups old-fashioned whole oats
- 1 tsp. baking powder
- 1 tsp. pure vanilla extract
- 1 tsp. ground cinnamon
To begin preparing your Baked Apple Berry Oatmeal, gather all of the ingredients. Adjust the oven rack to the lower third position and preheat the oven to 350 degrees F.
Coat a 9×9 inch, or any similar size or shape, baking pan with nonstick spray or butter. Using an 8×8 inch pan would be too small.
In a large bowl, add all the ingredients, whisk them together until fully mixed. Next, pour the mixture into the prepared baking pan.
Bake for 35 minutes or until the center appears almost firmed up. For drier and more solid baked oatmeal, bake for an additional 5 minutes or until the center has set.
Cool for 5 minutes before serving. Slice and serve with yogurt, fresh berries, and nuts. This baked oatmeal is also delicious straight out of the pan. Enjoy your Baked Apple Berry Oatmeal!
