Ingredients
Salad
- 1 head butter lettuce, chopped
- 1 head romaine, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, quartered
- 1 avocado, sliced
- 2 scallions, diced
- Toby’s Honey Mustard Dressing & Dip
Baked Salmon
- 4 6-oz salmon filets
- 2 tsp. olive oil
- 1 tsp. paprika
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Instructions
To begin preparing your baked salmon salad, gather all of the ingredients. Heat up the oven to 400 degrees F.
Put the salmon skin-side down on a baking sheet lined with parchment paper. Drizzle each filet with olive oil. Sprinkle with paprika, garlic powder, onion powder, salt, and pepper.
Place the sheet into the oven and bake for 8-10 minutes, or until internal temperature reaches 140 degrees F.
While salmon is cooking, prepare your salad. Layer the salad greens in a large bowl or platter. Add sliced cherry tomatoes, cucumbers, and scallions. Top with sliced avocado.
Plate each salad with a juicy piece of baked salmon.
