Gather all ingredients. If using fresh beets, bring two pots of hot water to boil. Destem and add in the red and golden beets separately. Boil for 30 minutes until fork tender. Remove beets from water and rub the skin off under cold water. Dice beets and set aside.
In a large serving bowl, add in golden beets. Arrange red beets, onions, cranberries, cilantro, pistachios, and cubed feta on top. Do not mix to preserve colors.
