Ingredients
- 2 cans black beans, drained
- 1 cup white onion, chopped
- 1 cup tomatoes, chopped
- 4 cups colby jack cheese, shredded
- 8 – 8in flour tortillas
- Toby’s Jalapeno Ranch Dressing & Dip
- Fresh Chives, chopped
Instructions
These cheesy quesadillas are accented with the perfect amount of heat and creaminess topped with jalapeno ranch and fresh chives! Gather all of the ingredients. In a medium bowl, combine the drained black beans, chopped onion, and chopped tomatoes. Mix well.
Place a skillet over medium heat and place a tortilla in it. Scoop a bit of the bean mixture on top of the tortilla, then generously sprinkle over the tortilla with some of the cheese. Cover with another tortilla and let the quesadilla cook for about 1 minute on each side until lightly browned and the cheese has fully melted, then remove from the heat. Repeat these steps with the rest of the tortillas.
Slice the quesadillas into 8ths and stack them over each other. Garnish with some freshly chopped chives. Serve with Toby’s Ranch Dressing & Dip to dip, or drizzle generously over the top of your quesadillas. Enjoy your Black Bean Quesadilla!
