- 1 can corn
- 1 can chickpeas
- 1 can black beans
- 1 jalapeño, minced
- 1/2 medium red onion, diced
- 1 orange bell pepper, diced
- 3/4 cup tomatoes, diced
- 1 avocado, pitted and diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, halved
- 1/4 cup Toby’s Honey Mustard Dressing & Dip
- Tortilla chips of choice, to serve
Try our spin on this recipe with our sweet and tangy Honey Mustard Dressing & Dip, plus chickpeas in place of black eyed peas. Yum! Gather all of the ingredients. In a medium to large mixing bowl, add in the corn, chickpeas, black beans, jalapeño, red onion, and diced bell pepper. Gently stir ingredients together. Using fresh corn, beans, and chickpeas is fine – make sure to cook the corn and soak the beans & chickpeas prior to preparation of this dish.
Next, add in the diced tomato, avocado, cilantro, and add a squeeze of fresh lime juice. Drizzle over with Toby’s Honey Mustard Dressing & Dip, then gently stir again until everything is coated and combined evenly.
Serve your dip with a plate or bowl of some corn tortilla chips. Enjoy your Cowboy Caviar!
