Ingredients
Overnight Oats
- 1/2 cup rolled oats
- 2 tbsp. chia seeds
- 1 cup coconut milk
- 1/2 cup Genesis Strawberry Apple Juice
- 1/2 tsp. cinnamon
Strawberry Chia Jam
- 1 cup mashed strawberries
- 1 tbsp. chia seeds
- Splash of Genesis Strawberry Apple Juice, if desired

We can’t get enough of these overnight oats! Prep these today for a quick ready-to-go breakfast tomorrow. To begin preparing your Creamy Coconut Overnight Oats, gather all of the ingredients.
Add all the ingredients, except for the strawberry jam, to a mason jar or any food safe sealed container, mixing it thoroughly. Set in the fridge overnight, or for at least 3 hours for the oats to fully absorb the moisture.
Meanwhile, wash, de-stem, and slice the strawberries. Mash the strawberries until fine. Add the mashed strawberries into a sealed container with the chia seeds, stir it thoroughly. Set the mixture in fridge for at least 1 hour to chill.
Assemble your oats by dividing the overnight oats into two bowls. Top it with the strawberry chia jam, some fresh strawberries, apples, peanut butter, and a bit of cinnamon. Enjoy your delish overnight oats!
