Ingredients
- 1 cup brown rice
- 2 cups chicken broth
- 1 tsp dried parsley
- Salt & pepper, to taste
- 2 tbsp butter
- 1 clove garlic, minced
- 3 pieces breaded frozen cod
- Toby’s Honey Mustard Dressing & Dip
- Fresh parsley
- 1 Lemon, sliced
Instructions
Gather all ingredients. Wash rice and add to a pot with chicken broth. Bring down to a simmer, then add salt, dried parsley, butter, and garlic. Lid and let simmer for 25 minutes until rice is fully cooked and liquid is absorbed.
Meanwhile, add cod to the air fryer and cook at 400 F for 12 minutes until crisp and golden.
Plate over rice and drizzle with Honey Mustard Dressing & Dip. Garnish with parsley and lemon, serve, and enjoy your Crispy Cod with Rice!
