Garlic Roasted Potatoes With Blue Cheese

- Toby’s Blue Cheese, to drizzle and dip
- 3 lbs. small red potatoes, can sub for any small potato
- 1/4 cup good olive oil
- 2 tbsp. minced garlic (6 cloves)
- 1 tsp. black pepper
- 1-2 tsp. salt of choice
Gather all ingredients. Heat oven to 400 degrees. Cut potatoes in halves or quarters and add to a bowl with olive oil, salt, pepper, and garlic. Toss until all the potatoes are well coated. Add more garlic if desired.
Spread potatoes out evenly on a baking sheet. Roast for one hour, more or less time depending on your oven. Flip potatoes twice during baking time to ensure they brown evenly. Remove from the oven and let cool for 5 minutes.
Serve with Toby’s Blue Cheese for drizzling and dipping. Enjoy!
