Ingredients
- 1 tbsp dijon mustard
- 1 Bottle Genesis Organic Ginger Apple Juice
- 2 large chicken thighs, skinless
- 6 oz brussel sprouts, trimmed & halved
- 6 oz mini potatoes, halved
- 1 apple, chopped
- 2 sprigs fresh rosemary, chopped
- 2 sprigs fresh oregano, chopped
- 1 tsp salt & pepper, to taste
Instructions
Gather all ingredients. Preheat the stove to high heat. In a large pot or deep pan, add dijon mustard, and Genesis Organic Ginger Apple Juice. Mix well, then add chicken thighs.
Place over heat until reaching a boil, then reduce heat, add lid, and allow to simmer for 15 minutes until chicken has become light brown and veggies are tender. Remove most of the liquid leaving about ¼ cup. Set aside chicken and veggies. Cook chicken in the pan for 5 minutes on each side, then add in veggies and cook it all together, stirring occasionally for 10 more minutes until liquid is reduced and chicken & veggies are seared and cooked through.
Remove from heat, and plate. Garnish with oregano & rosemary, serve, and enjoy your Ginger Apple Grilled Chicken!
