Ingredients
Grilled Chicken
- 1.5 lbs. chicken breasts, boneless, skinless
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- Salt and pepper, to taste
- 1 tbsp. olive oil
Cobb Salad
- 6-8 cups chopped romaine and kale, or mixed greens
- 3/4 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 medium cucumber, peeled and sliced
- 1 large avocado, thinly sliced
- 6 hard boiled eggs, sliced
- 8 slices cooked bacon, crumbled
- Toby’s Honey Mustard Dressing & Dip
Instructions
Gather all ingredients. In a medium bowl, combine the garlic powder, onion powder, salt, and pepper, then add the chicken. Coat with the spice mixture. Heat a grill pan, or grill, to medium-high heat. Brush the grill surface with olive oil. Once hot, add the seasoned chicken and grill about 5 minutes per side, or until just cooked through.
In a large serving bowl, layer the salad greens with cherry tomatoes, red onion, cucumber slices, avocado, cooked bacon crumbles, and sliced hard boiled eggs. Slice the grilled chicken and layer on top of the salad.
