Ingredients
- 2 4 oz salmon cutlets
- ½ iceberg lettuce head, chopped
- ½ cup english cucumber, sliced
- ½ cup grape tomatoes, sliced
- ¼ cup red olives
- ¼ red onion, thinly sliced
- 1 avocado, sliced
- 1 tbsp goat cheese
- ½ tsp black pepper
- Toby’s Honey Mustard Dressing & Dip
Instructions
Gather all of the ingredients. Heat a medium sized skillet over medium high heat and drizzle in cooking oil. Add salmon skin side up and sear the top for 4 minutes then gently flip and reduce heat to medium. Cook for 8 minutes until fully cooked. Set aside.
In a large serving bowl, add lettuce, english cucumber, tomatoes, and red onion. Lay out the salmon filets, avocado, and drizzle with Toby’s Honey Mustard Dressing & Dip.
Sprinkle over with goat cheese and black pepper. Serve and enjoy!
