Ingredients
Apple Compote
- 2 cups apples, fresh, diced
- 1/4 cup Genesis PNW or Ginger Apple Juice
- 1 tsp. cinnamon
- 2 tbsp. butter
- 1 tbsp. brown sugar
Pancakes
- 1 cup almond milk
- 1 tbsp. apple cider vinegar
- 1 cup flour, unbleached
- 1 tbsp. baking powder
- 1 tbsp. butter, melted
- 1 tbsp. maple syrup
- 1 tsp. vanilla
Instructions
Gather all ingredients.
Homemade Apple Compote:
Melt butter over medium heat, add brown sugar, and let dissolve. Add diced apple, cinnamon, and Genesis Apple Juice. Let simmer for 20 minutes or until apples are soft. Remove from heat.
Pancakes:
Combine milk and apple cider vinegar in a bowl or cup. In a mixing bowl, combine flour, baking powder, and salt. Stir in the melted butter, maple syrup, vanilla, and milk/vinegar mix.
Grease a non stick pan. Heat over medium-high heat and add batter. We used about 1/4 cup per pancake, but add more if you want them bigger or less for smaller. Flip after a minute or until browned.
Serve with compote, dash of cinnamon, drizzle of maple syrup, walnuts, and non-dairy whip cream. Enjoy!
