Ingredients
- 2 potatoes, peeled, chopped
- 3/4 cup tofu
we recommend using firm or extra firm - 1-2 sausage of choice
we used vegan Field Roast - 1 cup kidney beans
can sub for any beans - 1 cup kale, chopped
- 1/2 avocado, sliced
- Green onion, chopped, to garnish
- Salt and paprika, to taste
Instructions
Gather all ingredients.
Cook potatoes on medium heat in oil of choice for 5 minutes, add 2 tbsp. of water if needed to soften.
Add tofu, kidney beans, kale, and sausage to your pan with potatoes. Cook for another 5 minutes, or until golden. Season with paprika and salt. Add any other spice you’d like.
Plate and garnish with avocado and green onion. Serve with a glass of Genesis Lemonade of choice mixed with sparkling water. Enjoy!
