Ingredients
- 6 large eggs
- 1 cup Toby’s Feta Cheese Dressing & Dip
- 1 cup milk
- 1 tbsp olive oil
- ½ tsp Salt & pepper, to taste
- 1 tsp garlic powder
- 1 tsp thyme
- 1 tsp oregano
- 1 cup Mozzarella cheese, shredded
- 2 tbsp Parmesan cheese, grated
- 1 Pie crust
- 1 cup butternut squash, chopped
- 1 cup spinach, chopped
- Fresh thyme, garnish
Instructions
Gather all ingredients. Preheat the oven to 450 F. In a large bowl combine and whisk eggs, Toby’s Feta Cheese Dressing & Dip, milk, olive oil, salt & pepper, garlic powder, thyme, and oregano.
Add in mozzarella and parmesan cheese, mix until fully combined.
In a 9 inch glass pie dish, lay over the pie crust and use a fork to puncture holes in base and side. Power in half the egg mixture and add in most of the squash and spinach. Fold gently. Top with remaining egg mixture and top the quiche with remaining squash and spinach.
Cover with foil and bake for 20 minutes until firm. Then bake for 15 minutes until golden brown.
Serve with a drizzle of Feta Cheese Dressing and garnish with fresh thyme. Enjoy your Roasted Butternut Squash Quiche!
