Ingredients
- 4 large carrots, quartered
- 1 tbsp olive oil
- ½ tsp salt & pepper, to taste
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 cup arugula
- ¼ cup walnuts, candied
- ½ small avocado
- 1 tbsp goat cheese
- Toby’s Honey Mustard Dressing & Dip
- ½ tsp smoked paprika
Instructions
Gather all ingredients. Heat a skillet over medium high heat. In a large bowl, add carrots and olive oil, then toss until fully coated. Next add salt & pepper, garlic powder, and chili powder to the bowl and toss again. Roast for 10 minutes turning occasionally until tender and lightly charred.
On a serving platter, arrange a bed of arugula and lay out carrots. Top with candied walnuts, avocado, goat cheese, and drizzle with Toby’s Honey Mustard Dressing & Dip. Sprinkle with paprika, serve, and enjoy your Roasted Carrot & Arugula Salad! 🥕
