- 2 lbs Whole, rainbow carrots
- 1 tbsp olive oil
- 1 tsp salt & pepper to taste
- 2 tbsp Toby’s Yogurt Ranch Dressing
- 2 lemon slices
Gather all ingredients. Preheat a large skillet over medium heat. Add olive oil and roast carrots for 15 minutes, rotating the carrots occasionally until tender and lightly charred.
Add Toby’s Yogurt Ranch Dressing to a serving dish and spread to create a thin layer. Top with the roasted carrots and drizzle some more yogurt ranch dressing. Garnish with cilantro and lemon, serve, and enjoy!
