Ingredients
- Dough for single-crust pie
- 1 3/4 lbs. mixed seasonal tomatoes, seeded and cut into slices
- 1/4 cup green onions, thinly sliced
- 1/2 cup mayonnaise
- 1/2 cup cheddar cheese, shredded
- 2 tbsp. fresh basil, thinly sliced
- 2 tbsp. parmesan cheese, grated
- Salt and pepper to taste
- Toby’s Ranch Dressing & Dip, for dipping
Instructions
To begin preparing your rustic tomato pie with ranch dressing & dip, gather all the ingredients. Preheat the oven to 400 degrees F. On a lightly floured surface, roll dough into a 1/8” thick circle and gently transfer to a 9” pie dish. Trim crust to 1/2″ beyond the rim of the dish.
Add half of the tomatoes and half of the green onions to the dish. Combine cheddar cheese, mayonnaise, basil, salt, and pepper, then spread over the tomatoes. Top with remaining onions and tomatoes.
Next, fold the crust edge over filling, pleating as you go, and leaving an 8” opening in the middle. Sprinkle with parmesan cheese.
Bake on a lower oven rack until the crust is golden, around 30-35 minutes. Let stand 10 minutes before cutting.
Top with additional basil and serve your rustic tomato pie with Toby’s Ranch Dressing & Dip. Enjoy!
