Gather all ingredients. This recipe requires a blender and food processor.
Add pitted dates, walnuts & rolled oats to a food processor, blend until you get nice small bits of nuts/ dates. Add the “dough” to the bottom of a muffin pan. Press down evenly. Set in freezer.
Add cashews, coconut milk/ oil, maple syrup, lemon juice & peanut butter and to a blender. Blend until smooth. Add on top of crust to each dough in muffin pan. Set back in freezer until solid.
Saute apples, cinnamon and juice for 5 minutes under medium heat. We did this right before serving or keep raw if you like.
Blend 2 dates, 1/4 cup of Genesis Ginger Apple Juice, vanilla extract and 1 tbsp of peanut butter. This step is optional.
Set in freezer until cashew base is firm. If you make it in advance, remove from freezer 20 minutes before serving, then add apples and date sauce.
