Ingredients
- ½ cup wild rice mix
- ½ tbsp olive oil
- 4 oz black beans, we used canned
- 1 small white onion, finely chopped
- ¼ cup Parmesan cheese, grated
- ¼ cup Toby’s Blue Cheese Dressing & Dip
- ½ tsp garlic powder
- Salt & pepper to taste
- 2 large orange bell peppers
- ¼ cup colby jack cheese, shredded
Instructions
Gather all ingredients. Preheat the oven to 375 F and heat a greased skillet over medium high heat.
Wash rice and strain, then add ⅔ cups of water and olive oil. Bring to a boil in a pot then reduce to medium low heat for 30 minutes until all the liquid is absorbed. Remove from heat and fluff.
Meanwhile, in a bowl, combine black beans, onion, parmesan cheese, Toby’s Blue Cheese Dressing & Dip, garlic powder, and salt & pepper. Mix well until fully incorporated. Then, cook the mixture in a greased skillet for 10 minutes until tender and cooked through. Stirring occasionally.
Prepare the bell peppers by cutting an angled circle around the stem. Gently pull out and clean the interior. Slice off extra flesh attached to the base of the stem. Cut out a cute Jack-o-lantern face on each pepper!
Combine rice and bean mixture together and mix well. Spoon mixture into each bell pepper until full, then sprinkle over each with colby jack cheese. Top with the stem piece then bake on a grease baking sheet for 10 minutes until the cheese is fully melted.
Plate the peppers, serve, and enjoy your Stuffed Pepper Jack-O-Lanterns!
