Ingredients
- 6 oz ground turkey
- ½ tsp. cumin
- 1 tsp. chili powder
- 1 tsp. garlic powder
- Salt and pepper, to taste
- 1 tbsp. cooking oil of choice
- Cooking spray, to grease pan
- 6 small flour tortillas
- 1 cup Colby jack cheese
- 6 tbsp. Toby’s Jalapeño Dressing & Dip
- ¼ cup cherry tomatoes, sliced
- ¼ cup red onion, diced
- 1 avocado, diced
- 1 jalapeño, diced
- ¼ cup cilantro, chopped
Instructions
Gather all ingredients. Preheat the oven to 375 degrees F. Heat a skillet over medium heat, then add oil and ground turkey. Mix constantly and add cumin, chili powder, garlic powder, salt and pepper. Cook for 10 minutes until the turkey is no longer pink. Note, it will be cooked longer in the oven.
Spray a muffin tin with cooking spray and line them with flour tortillas, folding them to fit. Add in ground turkey and cheese to each cup. Spray with more cooking oil to crisp up the cups, then bake for 10 minutes until the cheese is melted.
Remove from the oven. Fill each cup with a drizzle of Toby’s Jalapeño Dressing & Dip, cherry tomatoes, red onion, avocado or jalapeño, and cilantro.
Serve on a plate with a ramekin of more ranch, and enjoy your Taco Cups with Jalapeño!
