Ingredients
Falafel
- 5 tbsp Instant falafel mix
- ¼ cup water
- 1 tbsp olive oil
- ½ cup vegetable oil
Gyros
- 3 pita bread, warmed
- ½ english cucumber, sliced & halved
- ½ cup cherry tomatoes, quartered
- 3 tbsp Feta cheese crumble
- Fresh dill
- Toby’s Feta Cheese Dressing & Dip
Instructions
Gather all of the ingredients. Heat a deep skillet over medium high heat and add vegetable oil. In a bowl, combine, falafel mix and water and let sit for 15 minutes or as box instructions direct. Coat palms in olive oil to avoid sticking, and roll 9 falafel balls, adding them to the hot oil as you go. Cook on each side for 1 minute until browned and cooked through.
Plate the pita bread and add in falafel balls, then top with cucumber and cherry tomatoes. Drizzle with Toby’s Feta Cheese Dressing & Dip, feta cheese crumble, and fresh dill. Serve and enjoy your Veggie Falafel Gyros!
