Ingredients
- ¼ cup Quinoa, rinsed
- ½ cup water
- 2 tbsp Olive oil
- 1 cup canned Chickpeas, drained & rinsed
- Salt & pepper, to taste
- 2 cups Spinach
- ¼ cup Red onion thinly sliced
- ½ cup Cherry tomatoes, halved
- ½ cup Cucumber, sliced
- ¼ cup Red olives, pitted
- Fresh Leafy parsley, chopped
- Fresh Dill, chopped
- Feta cheese crumble
- Toby’s Jalapeño Dip & Spread
Instructions
Gather all ingredients. Heat a large skillet over medium high heat and add 1 tbsp of olive oil. Add in chickpeas and salt & pepper to taste, stirring occasionally until golden brown and moisture is absorbed. Set aside.
Meanwhile, add Quinoa, 1 tbsp olive oil, and water to a small pot and bring to a boil on the stovetop. Cover, lower heat and simmer for 15 minutes until liquid is absorbed. Fluff quinoa and cover to let sit for a couple minutes.
Arrange a bed of spinach in 1-2 serving dishes. Add quinoa, red onion, cherry tomatoes, roasted chickpeas, cucumber slices, and red olives. Finish off with a sprinkle of feta cheese crumble, leafy parsley, dill, and a dollop of Toby’s Jalapeño Dip & Spread. Serve and enjoy your Quinoa Power Bowl!
