Ingredients
- 1 cup Asparagus, trimmed
- 1 tbsp Olive oil
- ¼ tsp Salt & pepper, to taste
- 2 cups Spring salad mix
- ¼ cup White canned beans, drained & rinsed
- 2 tbsp Red onion, finely chopped
- 2 tbsp Red olives, sliced
- ¼ cup Cherry tomatoes, sliced
- Toby’s Feta Cheese Dressing & Dip
- Fresh cilantro, chopped
- 1 tbsp Goat cheese crumble
- 2 Lemon wedges, garnish
Instructions
Gather all ingredients. Bring a skillet to medium high heat and add olive oil. Roast asparagus in the skillet for 10 minutes, flipping occasionally until tender and vibrant. Remove from heat and set aside.
In 1- 2 bowls, arrange a bed of spring salad mix. Add white beans, red onion, red olives, cherry tomatoes, and roasted asparagus. Drizzle with Toby’s Feta Cheese Dressing & Dip and finish with goat cheese crumble. Garnish with cilantro and lemon wedges. Serve and enjoy your Asparagus Cucumber Tomato Salad!
