Ingredients
- 1 cup Orzo, dry
- 1 cup Panko breadcrumbs
- 2 tbsp Fresh parsley, finely chopped
- 2 tbsp Fresh dill, finely chopped
- 4 Cod or halibut filets, fresh or dethawed
- 1 tbsp olive oil
- Toby’s Yogurt Ranch Dressing & Dip
- ¼ tsp Salt & pepper, to taste
- 1 Lemon, sliced
Instructions
Gather all ingredients. Preheat the oven to 400 F. In a bowl, combine breadcrumbs, parsley, and dill. Mix until fully combined.
Arrange fish filets on a parchment lined baking sheet and coat top with breadcrumb mixture. Drizzle with olive oil or use cooking spray and bake fish for 15 minutes until cooked through and breadcrumbs are golden brown.
Meanwhile, bring a pot of water to boil and add orzo. Cook for 7 minutes for al dente and strain.
Add a bed of orzo to four bowls and top with baked fish filet drizzled with Toby’s Yogurt Ranch Dressing & Dip, more fresh herbs, and salt & pepper to taste. Serve with lemon slices and enjoy your Baked White Fish!
