Ingredients
- ½ cup Quinoa, uncooked
- 1 tbsp olive oil
- 1 cup Canned chickpeas, drained and rinsed
- ¼ cup Honey BBQ sauce
- ¼ cup Pickled red onion, thinly sliced
- 1 cup Canned sweet corn, drained and
- 1 large Avocado, chopped
- Toby’s Ranch Dressing & Dip
- Fresh chives, finely chopped
- 2 Lemon wedges
Instructions
Gather all ingredients. Heat a skillet over medium high heat. Wash quinoa and add to a pot with 1 cup of water. Bring to a boil, then lower heat and cover. Let simmer for 15 minutes until liquid is absorbed and quinoa is cooked through. Fluff and set aside.
Meanwhile add olive oil and chickpeas to the skillet, and roast for 5 minutes until slightly browned. Bring down heat to medium and add BBQ sauce. Cook for another 5 minutes until reduced to preference.
In two separate bowls, divide quinoa, chickpeas, pickled red onions, corn, and avocado. Drizzle with Toby’s Ranch Dressing & Dip and finish with fresh chives.
