- 9 large eggs
- ½ cup whole milk
- ¼ cup Toby’s Ranch Dressing & Dip
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 8 hash brown patties, frozen
- 1 cup cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- ½ cup green peppers, diced
- ½ cup tomatoes, diced
- ½ cup red onions, diced
- 2 green onions, diced
Gather all ingredients. Preheat the oven to 350 degrees F. In a large bowl, combine eggs, milk, Toby’s Ranch Dressing & Dip, salt, pepper, and garlic powder. Mix well until fully combined.
Grease a large glass or metal baking dish and place the hash brown patties in one layer. Sprinkle with cheddar and monterey jack cheese, then add the peppers, tomatoes, red onions, and green onions on top. Gently fold the veggies into the egg mixture.
Cover with foil and bake for 20 minutes. Remove the foil and bake for another 5 minutes, until fully cooked through.
