Ingredients
- 6 large russet potatoes, peeled
- 1 cup Toby’s Ranch Dressing & Dip
- Salt & pepper, to taste
- 1 cup cheddar cheese, shredded
- 4 strips bacon, cooked
- Fresh chives, finely chopped
Instructions
Gather all ingredients. Bring a large pot of water to boil. Add potatoes and boil for 25 minutes until fork tender.
Preheat the oven to 325 F. Add cooked potatoes to a large bowl and add Toby’s Ranch Dressing & Dip, salt & pepper, and ⅓ cup cheddar cheese. Mash using a fork or potato masher until fluffy. Add more dressing as needed.
Grease a casserole dish with nonstick spray, then add half the mash potatoes, smooth to edges. Top with a drizzle of ranch, and half the remaining cheese and half the bacon crumbled. Top with remaining mashed potatoes and smooth out again. Top with remaining cheese and crumbled bacon.
Bake in the oven for 10 minutes, or until the cheese is fully melted. Garnish with green onions, serve, and enjoy your Cheesy Bacon Mashed Potatoes!
