Ingredients
Filling
- 1 tbsp olive oil
- ½ cup Black beans
- ¼ cup Tomatoes, diced
- 2 tbsp Green chiles, diced
- ¼ cup Canned corn, drained
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Chili powder
- ¼ tsp Cumin
- ½ tsp Salt & pepper to taste
- ¼ cup Colby jack cheese mix, shredded
Fixings
- 8 Street taco corn tortillas
- Toby’s Jalapeño Ranch Dressing & Dip
- ½ cup Iceberg lettuce, shredded
- 1 Jalapeño, sliced
- Fresh cilantro, chopped
- Fresh lime wedges
Instructions
Gather all ingredients. Preheat the air fry to 400 F. Heat a skillet over medium high heat and add olive oil. Cook beans, tomatoes, green chiles, corn, garlic powder, onion powder, chili powder, cumin, and salt & pepper stovetop, stirring frequently for 10 minutes until tender and warmed.
Microwave the corn tortillas for 30 seconds 2-3 at a time with a damp paper towel draped over. The tortillas must be warm enough to prevent breaking while being rolled.
Add about 2 tbsp black bean filling and 1 tbsp colby jack cheese to the center of each tortilla, then roll firmly flap facing down. Once they are rolled, place on a plate in the freezer to hold its shape.
Spray the air fryer with cooking spray, and arrange the taquitos. It’s okay if they are touching. Air fry for 7-8 minutes until golden and crispy.
Top with Toby’s Jalapeño Ranch Dressing & Dip, lettuce, diced tomatoes, shredded cheese, and jalapeño. Garnish with fresh cilantro and a squeeze of lime. Serve and enjoy your Cheesy Black Bean Taquitos!
