Ingredients
- 2 cups mashed potatoes, cold
- 1/2 cup cheddar cheese, shredded
- 1/2 cup all purpose flour
- 1 egg, large
- 1 1/2 cups panko bread crumbs
- 2 tbsp. Italian parsley, chopped
- Oil of choice, for frying
- Flaky salt and pepper, to taste

Instructions
Gather all ingredients. In a large bowl, add the mashed potatoes, cheddar cheese, and chopped parsley and mix.
Beat one egg in a small bowl. Add panko bread crumbs to a shallow bowl and the flour to a third bowl.
Scoop the mashed potato mix into a small ball shape, roughly 3 tbsp. in size, and roll in flour to coat. Next, dip in egg and let excess drip off. Then, roll the potato ball in bread crumbs until thoroughly coated. Place on a large baking sheet.
In a large skillet or pan, heat oil on medium-high heat. Gently place each croquette into the hot oil. Fry each side of the croquette for one minute or until golden brown. Place on a wire rack or paper towel to soak up excess oil. Repeat the process until all croquettes are cooked.
