Gather all ingredients. In a large bowl combine a third of the chickpeas, Toby’s Yogurt Ranch Dressing & Dip, and dijon mustard. Mash the chickpeas and mix well. Add remaining chickpeas, shallot, celery, parsley, and salt & pepper to taste. Mix well but don’t mash.
Scoop chickpea salad onto a slice of bread, add microgreens, and top with another bread slice. Serve and enjoy your Chickpea Salad Sandwich!
