Ingredients
- 2 cups Kale, blanched
- 2 cups Brussel sprouts, chopped
- Sweet potato, sliced
- 1 tbsp Olive oil
- 1 tsp Garlic powder
- ½ tsp Salt & pepper, to taste
- ½ tsp Thyme, dried
- 1 cup Farro, 2 cups cooked
- Toby’s Plant Based Dip & Spread
- Chives
Instructions
Gather all ingredients. Heat a pan over medium high heat. Add olive oil, brussel sprouts, and sweet potato slices to the pan and season with garlic powder, thyme, and salt & pepper. Cook for 20 minutes until lightly charred and tender.
Divide kale, farro, brussels, and sweet potatoes between two bowls. Top with a dollop of Toby’s Plant Based Dip & Spread and chives. Serve and enjoy your Cozy Autumn Grain Bowl!
