Ingredients
- 4 oz Baby gold yukon potatoes, quartered
- 1 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Onion powder
- Salt & pepper, to taste
- 1½ cups Romaine, chopped
- Toby’s Caesar Dressing & Dip
- Parmesan cheese, shredded (optional)
- 2 Fresh lemon wedges
Instructions
Gather all ingredients. Heat a skillet over medium high heat. Toss golden potatoes in olive oil, then add to the heated skillet. Season in the pan with garlic powder, onion powder, and salt & pepper to taste. Toss occasionally to get a golden sear for 5 minutes, then lower to medium heat and cover. Cook for 15 minutes tossing frequently to keep sides from burning and golden brown. Remove from heat and set aside.
In 1-2 bowls, arrange a bed of romaine. Top with golden potatoes and drizzle generously with Toby’s Caesar Dressing & Dip. Optionally, sprinkle with parmesan cheese.
Serve with a lemon wedge and enjoy your Crispy Potato Caesar Salad!
