Gather ingredients. Preheat the oven to 425 F. Chop the carrots so the are all about 2-3 inches long and about half an inch or less thick. Place chopped carrots in a large bowl and add in olive oil and all spices. Toss by hand until they are evenly coated, then add in the cornstarch and toss again.
Grease a large baking sheet and spread out the chopped carrots on it evenly in one layer. place in the oven for about 20 minutes and flip the fries about halfway through. Carrots should have some charring. Remove carrot fries and let cool. Or you can pop these fries in the air fryer for 10 minutes at 425 F.
Once your fries have cooled, plate them and sprinkle over some fresh parsley or herbs of choice. Add some extra salt as needed. Serve with Toby’s Ranch Dressing & Dip and Toby’s Honey Mustard Dressing & Dip on the side. Enjoy your Crispy Roasted Carrot Fries!
