Gather all ingredients. Wash potatoes and add them to a large pot of water. Bring water to a boil for 15 minutes until fork tender. Preheat the oven to 450 degrees F.
Lightly grease a baking sheet pan. Place potatoes on the pan and smash them flat with the bottom of a cup. In a small bowl, combine olive oil, garlic, and parsley.
Drizzle the potatoes with the garlic oil mixture and season with salt & pepper. Bake for 15 minutes until crispy and golden brown. Serve with a ramekin of Toby’s Feta Cheese Dressing & Dip and enjoy your Crispy Smashed Potatoes!
