Ingredients
- 1 cup Red bell pepper, sliced
- 1 cup Green bell pepper, sliced
- 1 tbsp olive oil
- 1 tsp Chili powder
- ½ tsp Cumin
- 2 tsp Garlic powder
- Salt & pepper, to taste
- 2 cups White or brown rice, cooked
- ¼ cup canned brown beans, drained
- ¼ cup canned corn, drained
- Toby’s Jalapeño Plant Based Dip & Spread
- Fresh lime slices
- Fresh jalapeño slices
Instructions
Gather all ingredients. Heat a skillet over medium high heat and add olive oil. Add bell peppers to the skillet and season with chili powder, cumin, garlic powder, and salt & pepper. Stir frequently and cook for 10 minutes until lightly charred and tender.
In two serving dishes or bowls, arrange a bed of rice and roasted bell pepper. Add beans, corn, and a generous serving of Toby’s Jalapeño Plant Based Dip & Spread to each.
Garnish with fresh lime and jalapeño slices. Serve with tortilla chips and enjoy your Fajita Veggie Rice Bowl!
