Ingredients
- 6 fresh artichokes
- 12 garlic cloves, peeled
- 2 lemons, halved
- Salt and pepper to taste
- Olive oil
- Toby’s Feta Cheese Dressing & Dip
- Lemon slices for serving
Instructions
Gather all ingredients. Prepare artichokes by cutting off the top inch or so of the artichoke, as it is inedible. Cut off the bottom stem. Trim the small thorns off the petals with kitchen scissors or a knife. Remove the small leaves at the base of the artichoke and pull off any smaller leaves surrounding the base. Rinse the artichokes under running water to wash off any excess dirt, opening the leaves as you rinse to wash away anything trapped in between.
Heat oven to 400 degrees F. Cut artichokes in half and rub with olive oil and lemon. Season with salt and pepper to taste. Then, place them on a parchment lined baking sheet. Next, place a clove of peeled garlic under each artichoke half.
Place the baking pan in the oven and roast for 30 minutes. Remove from heat and flip each artichoke. Place a garlic clove in each artichoke half and mash into the cavity. Add additional olive oil and fresh lemon juice, if desired. Reduce the oven to 375 degrees F. Roast cavity side up for 20 minutes or until artichokes are tender.
