- 1 tbsp olive oil
- 1 small sweet potato, chopped
- 4 oz mini golden potatoes, quartered
- Salt & pepper, to taste
- ¼ tsp thyme
- ¼ tsp oregano
- 1 cup Kale, chopped
- 2 eggs
- 1 cup baby arugula
- 1 small avocado, sliced
- 1 tbsp Goat cheese crumble
- 4 tbsp Toby’s Feta Cheese Dressing & Dip
- ½ tsp everything bagel seasoning
Gather all ingredients. Heat a large skillet over medium high heat and add olive oil. Add sweet potato and golden potatoes, season with salt & pepper, thyme, and oregano. Cook for 10 minutes until tender and lightly crisp. Add in kale and cook for another 5 minutes tossing occasionally until kale is tender. Divide the potato and kale on two plates, then fry two eggs over easy for 5 minutes in the pan.
Plate the eggs on each plate, then top with baby arugula, avocado, and goat cheese. Drizzle with Toby’s Feta Cheese Dressing & Dip and sprinkle with everything bagel seasoning. Serve and enjoy your Harvest Breakfast Hash!
