Gather all of the ingredients. In a large pot, bring 6 cups of water to boil and add in the lentils. Cover the pot with a lid and bring it down to a low simmer. Let the lentils cook for about 10 minutes, or until the lentils become tender and all the liquid is no longer visible.
While the lentils are still cooking, heat up a skillet with some olive oil over medium high heat. Add in the diced red bell pepper, the sliced asparagus, the diced red onion, salt, and pepper to the skillet and cook for 15 minutes or until the veggies are fully cooked.
In a serving bowl, add in the lentils and veggies. Drizzle with Toby’s Feta Cheese Dressing & Dip. Finish off with some crumbled feta cheese. Serve and enjoy your Lentil Salad with Feta!
