Ingredients
- 2 russet potatoes, thinly sliced (½ – ¼ inch thick)
- ⅓ cup Colby jack cheese, shredded
- Toby’s Ranch Dressing & Dip
- ½ tsp Salt & pepper, to taste
- 4 tbsp Bacon bits
- 2 tbsp Chives, finely chopped
- 2 tbsp Parmesan cheese, grated
Instructions
Gather all ingredients. Preheat the oven to 350 F. Line a baking sheet with parchment and arrange potato slices evenly apart. Drizzle with olive oil and bake for 30 minutes until golden.
Top each potato medallion with colby jack cheese and bake for another 10 minutes until cheese is puffed up. Remove and let cool.
Top each bite with a small dollop of Toby’s Ranch Dressing & Dip, bacon bits, fresh chives, and parmesan cheese. Serve and enjoy your Loaded Baked Potato Bites!
