Ingredients
- 1.5 lbs mini golden potatoes
- 1 tbsp olive oil
- ½ tsp salt & pepper to taste.
- 4 tbsp bacon bits
- 2 tbsp green onion, sliced
- ¼ cup cheddar cheese, shredded
- ⅓ cup Toby’s Jalapeño Ranch Dressing & Dip
Instructions
Gather all ingredients. Preheat the oven to 365 F. Line a baking sheet with parchment paper and arrange potatoes in one layer. Drizzle with olive oil evenly and sprinkle with salt & pepper, to taste. Bake in the oven for 30 minutes until golden brown, shaking halfway through.
In a serving bowl, combine potatoes, bacon bits, green onion, and Toby’s Jalapeño Ranch Dressing & Dip. Toss until fully coated and chill in the fridge before serving. When cold, top with green onions & shredded cheese and enjoy your Loaded Baked Potato Salad!
