Ingredients
- 1 cup brown rice, cooked
- 1 cup baby arugula
- Toby’s Plant Based Dip & Spread
- ¼ cup cherry tomatoes, halved
- 2 tbsp red onion, thinly sliced
- 2 tbsp green olives
- 1 tbsp goat cheese (optional)
- 1 tbsp fresh dill, chopped
- 1-2 rounds of pita bread, warmed & sliced
- Salt & pepper, to taste
Instructions
Gather all ingredients. In a bowl, add rice, baby arugula, and a large dollop of Toby’s Plant Based Dip & Spread. Arrange cherry tomatoes, red onion, and green olives, then sprinkle with goat cheese and dill.
Finish by adding some salt & pepper and sliced pita bread to dip. Serve and enjoy your Quick Easy Protein Bowl!
