Ingredients
- 1 Yellow bell pepper, cut into large flat pieces
- 1 Red bell pepper, cut into large flat pieces
- 1 tbsp Olive oil
- 1/4 tsp salt & pepper, to taste
- 2 slices Artisan bread, toasted
- 1 tbsp Pickled beet puree
- 1 tbsp Microgreens
- 1/4 cup Carrot shavings
- 1 Avocado, sliced
- Toby’s Original Dip & Spread
- 1 tbsp Pesto
Instructions
Gather all of the ingredients. Bring a skillet to medium high heat and add olive oil. Place the bell pepper cuts flat and cook each side for 5 minutes until tender and lightly browned, salt & pepper to taste. Remove from heat.
Spread purred beets on one bread slice sing face, and pesto on the other. Place flat, top and spread with Toby’s Original Dip & Spread. Add avocado, carrot shavings, roasted bell pepper and microgreens on one slice, then cover with other slice of bread.
Cut in half, serve & enjoy your Rainbow Roasted Veggie Sandwich!
