Ingredients
- 2 tbsp Olive oil
- 12 oz Chicken thighs, skin on bone in
- ½ tsp Salt & pepper, to taste
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 4 cups Cauliflower florets
- 1 tbsp Mint, chopped
- 1 tbsp Cilantro, chopped
- Toby’s Ranch Dressing & Dip
- 1 Fresh lemon, quartered
Instructions
Gather all ingredients. Preheat the oven to 425 F. In a shallow dish, rub chicken thighs with salt & pepper, then season with garlic powder and onion powder.
Drizzle oil evenly over a baking sheet and arrange chicken and cauliflower in one layer. Bake for 40 minutes until chicken is golden brown and cauliflower is cooked through and tender. Salt & pepper to taste.
Serve with a ramekin of Toby’s Ranch Dressing & Dip mixed with fresh mint and cilantro, a lemon wedge, and your grains of choice and enjoy your Roasted Chicken & Cauliflower!
