Ingredients
Spicy Shrimp
- 1 lb large shrimp peeled, deveined, and tails removed
- 3/4 tsp. cumin
- 1/2 tsp. garlic powder
- 1 tbsp. chili powder
- 1/2 tsp. cayenne powder, omit for less spicy
- 3/4 tsp. oregano
- 3 tbsp. olive oil
- Salt and pepper, to taste
Mango Salsa & Tacos
Salsa
- 2 small mangoes, diced
- 1/4 cup red onion, finely diced
- 1 Jalapeño, sliced
- 1/3 cup fresh cilantro, chopped
- Juice of 1 lime
Tacos
- 6-12 corn tortillas, soft
- Toby’s Jalapeño Ranch Dressing & Dip
- Fresh cilantro, to garnish
Instructions
To begin preparing your Spicy Shrimp Tacos with Mango Salsa, gather all of the ingredients. If you are using frozen shrimp, be sure to thaw them out and pat them dry prior to preparing this recipe.
In a large bowl, toss the shrimp with 2 tablespoons of olive oil, chili powder, cumin, cayenne, oregano, garlic, salt and pepper. Stir well to evenly coat. Set aside until you’re ready to cook.
Next, in another bowl, add the diced onion, cilantro, jalapeño, and mangoes. Toss them all together with the juice of one lime. Set your salsa aside.
Then, cook the shrimp by heating up a skillet to medium high. Add in the remaining olive oil to the skillet. Next add the shrimp and spread them all out to one even layer. Cook the shrimp for about 3 minutes on each side, until fully cooked through, this should take around 6 minutes total. Remove the shrimp from heat.
Finally, to assemble the tacos, place the cooked shrimp into the warmed corn tortillas. Generously cover the shrimp with mango salsa and some sprigs of fresh cilantro. Drizzle Toby’s Jalapeño Ranch Dressing over each taco to taste. Serve and enjoy your Spicy Shrimp Tacos with Mango Salsa!
