Ingredients
- 6 Baby bella mushrooms, destemed and hollowed
- ¼ cup Ricotta cheese
- ¼ cup Spinach, finely chopped
- ½ tbsp Fresh thyme, destemed and chopped
- ½ tsp Salt & pepper, to taste
- ¼ cup Toby’s Feta Cheese Dressing & Dip
- 1 tbsp Parmesan cheese, grated
- 2 tbsp Panko breadcrumbs
Instructions
Gather all ingredients. Preheat the oven to 375 F. In a mixing bowl, combine ricotta cheese, spinach, thyme, salt & pepper to taste, and Toby’s Feta Cheese Dressing & Dip. Mix well until fully combined.
On a lined baking sheet, arrange the mushrooms, hollow side up, and stuff with the cheese mixture. In another bowl, combine parmesan and breadcrumbs, mix well and sprinkle over the mushrooms. Spray with cooking oil and bake for 25 minutes until golden brown.
Plate the mushrooms and drizzle with more Feta Cheese Dressing. Serve and enjoy your Stuffed Spinach Mushrooms!
