Veggie Cucumber Rolls with Plant Based Dip & Spread

- 2 english cucumbers
- 4 tbsp. Toby’s Plant Based Dip & Spread
- 1 red bell pepper, sliced
- Avocado, sliced
- Carrot, julienned
Gather all ingredients. Use a mandolin or large peeler to thinly slice the cucumbers. Lay down cucumber strips, overlapping them halfway over each other, then pat dry with a paper towel. Place three strips horizontally and pat dry again.
Carefully spread Toby’s Plant Based Dip & Spread evenly over the cucumber leaving an inch border. Arrange a small amount of red bell pepper, avocado, and carrots in the center and roll like a sushi roll using a paper towel.
Put toothpicks through the roll every inch or so apart and gently slice in between them. Serve and enjoy!
