Ingredients
- 1 cup Medium sized shrimp, frozen / uncooked
- 1 tbsp olive oil
- 1 tbsp Chipotle seasoning
- ½ cup Romaine, chopped
- ½ cup Brown rice, cooked
- ¼ cup Canned triblend beans, drained
- ¼ cup Canned corn, drained
- ¼ cup Tomato, diced
- 1 small Avocado, sliced
- Toby’s Yogurt Ranch Dressing & Dip
- Fresh cilantro or parsley, garnish
- Fresh lime, garnish
Instructions
Gather all ingredients. Heat a skillet over medium heat and add olive oil. Toss in the shrimp and cover with chipotle seasoning. Lid and cook for 15 minutes until curled and brightly colored, stirring occasionally.
In 1-2 bowls, add a bed of romaine and brown rice, then top with beans, corn, tomato, and avocado. Drizzle with Toby’s Yogurt Ranch Dressing & Dip and garnish with fresh cilantro and a slice of lime.
