Ingredients
Roasted Chickpeas
- ½ cup Canned chickpeas, drained & rinsed
- 1 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Onion powder
- ½ tsp Chili powder
- ¼ tsp Ground black pepper, to taste
- ½ tbsp Soy sauce
Salad fixings
- 1 medium head Butter lettuce
- 4 Red radishes, thinly sliced
- ¼ cup Cucumber, thinly sliced
- 1 Avocado, pitted, & sliced
- Toby’s Feta Cheese Dressing & Dip
- Fresh dill, chopped
- ¼ tsp Salt & pepper, to taste
- 1-2 lemon wedges
Instructions
Gather all ingredients. Heat a skillet over medium high heat. Add chickpeas to the skillet for 5 minutes, tossing frequently until liquid is evaporated. Then, add olive oil and toss until evenly coated, season with garlic powder, onion powder, chili powder, and salt & pepper to taste, then add soy sauce. Continue tossing the chickpeas for 5 minutes until golden brown, then remove from heat.
In a serving dish, arrange a bed of butter lettuce and add radishes, cucumber, avocado, and drizzle with Toby’s Feta Cheese Dressing & Dip.
Finish with fresh dill, salt & pepper to taste, and a squeeze of lemon. Serve and enjoy your Bright Seasonal Spring Salad!
