Ingredients
BBQ Jackfruit
- 2 cups canned jackfruit
- ½ tbsp. olive oil
- 1 onion, chopped
- 1/2 cup bbq sauce
- 1/2 tsp. garlic powder
- 1 tsp. paprika, smoked
- 1/2 tsp. red chili powder, optional
- 4 brioche buns, toasted
- Pickles, sliced
Coleslaw
- 1 1/2 cups cabbage, shredded
- 1 cup carrots, julienned
- 1 tbsp. lemon juice
- 1/2 tsp. mustard paste
- 3/4 cup Toby’s Blue Cheese Dressing & Dip
- 1/2 tsp. brown sugar
- 2 tsp. salt & pepper
Instructions
Gather all of the ingredients. Heat a pan with oil over medium heat, add jackfruit and cook for 10 minutes. As it cooks, use a wooden spoon or spatula to separate the jackfruit chunks from each other to achieve a shredded texture. Add in the BBQ sauce, garlic powder, paprika, red chili powder, and onion. Cook for another 10 minutes until tender.
Meanwhile, prepare the coleslaw by combining cabbage, carrots, lemon juice, mustard, Toby’s Blue Cheese Dressing & Dip, brown sugar, and salt & pepper. Mix well until fully combined.
Layer coleslaw, BBQ jackfruit, and pickles on a brioche bun half and top it with the other half. Serve and enjoy your BBQ Jackfruit Sliders!
